VARIETIES

100% Tempranillo from Arabarte´s oldest vineyards.

 

FERMENTATION

After being selected from the best vineyards, the grape begins its fermentation in stainless steel, temperature-controlled tanks. Vatting lasts approximately 11-15 days in which the lees are pumped over the cap on a daily basis to bring the must into contact with the skins and so that the wine begins to develop its own personality. Devatting into French oak casks is performed at just the right moment, selecting the portion of wine with the greatest concentration in structure, tannicity and its best qualities (core fraction). In the casks, the malolactic fermentation will take place. After a total of 12 months in the casks, during which the lees are worked through “batonnages”, the wine is bottled, where it will round off.

 

TASTING NOTES

A very intense violet colour; touches of fruit and licorice in the nose, which harmonise with the hints of spices, leather and roasting contributed by the French oak. In the mouth it is fleshy, full of character, with fine, polished tannins, and a very long aftertaste.
